1. Turkey Lettuce Wraps
Ingredients:
- 200g ground turkey
- Romaine lettuce leaves
- Diced tomatoes
- Avocado
- Spices (cumin, paprika, garlic powder)
- Heat 1 tsp olive oil in skillet over medium heat
- Add ground turkey and cook until browned, breaking into small pieces
- Add 1/2 tsp each of cumin, paprika, and garlic powder
- Cook for 5-7 minutes until turkey is fully cooked
- Wash and dry romaine lettuce leaves
- Dice tomatoes and avocado
- Assemble wraps by placing turkey mixture in lettuce leaves
- Top with tomatoes and avocado
- Serve immediately
2. Veggie Omelette
Ingredients:
- 2 eggs
- Spinach
- Mushrooms
- Bell peppers
- 1 tsp olive oil
- Heat 1 tsp olive oil in non-stick skillet
- Sauté diced bell peppers and mushrooms for 3-4 minutes
- Add handful of spinach and cook until wilted
- In a bowl, beat 2 eggs with salt and pepper
- Pour eggs over vegetables, tilting pan to distribute evenly
- Cook over medium heat until edges set
- Gently lift edges to let uncooked egg flow underneath
- When mostly set, fold omelette in half
- Cook for 1 more minute then slide onto plate
3. Cauliflower Fried Rice
Ingredients:
- 1 head cauliflower (riced)
- Mixed vegetables (peas, carrots, corn)
- 1 egg
- Low-sodium soy sauce
- Sesame oil
- Heat 1 tbsp sesame oil in large skillet or wok
- Add riced cauliflower and stir-fry for 3-4 minutes
- Add mixed vegetables and cook for 2-3 minutes
- Push mixture to one side of pan
- Crack egg into empty side and scramble
- Mix everything together
- Add 1 tbsp low-sodium soy sauce and 1/2 tsp sesame oil
- Stir-fry for 1 more minute
- Serve hot
4. Black Bean Soup
Ingredients:
- 1 can black beans
- 1 cup vegetable broth
- Diced tomatoes
- Cumin and chili powder
- Lime juice
- In a large pot, combine black beans, vegetable broth, and diced tomatoes
- Add 1/2 tsp cumin and 1/4 tsp chili powder
- Bring to boil then reduce to simmer
- Cook for 15 minutes, stirring occasionally
- Use immersion blender to partially blend soup
- Add 1 tbsp lime juice and stir
- Serve hot with optional toppings: cilantro, avocado, or Greek yogurt
5. Berry Smoothie
Ingredients:
- 1 cup mixed berries
- 1/2 banana
- 1 cup almond milk
- 1 tbsp chia seeds
- 1/2 cup spinach
- Add 1 cup mixed berries to blender
- Add 1/2 banana (frozen for thicker smoothie)
- Pour in 1 cup almond milk
- Add 1 tbsp chia seeds and handful of spinach
- Blend on high until completely smooth
- Pour into glass and serve immediately
- Optional: Top with additional berries or chia seeds
