1. Turkey Lettuce Wraps

Ingredients:

  • 200g ground turkey
  • Romaine lettuce leaves
  • Diced tomatoes
  • Avocado
  • Spices (cumin, paprika, garlic powder)
  1. Heat 1 tsp olive oil in skillet over medium heat
  2. Add ground turkey and cook until browned, breaking into small pieces
  3. Add 1/2 tsp each of cumin, paprika, and garlic powder
  4. Cook for 5-7 minutes until turkey is fully cooked
  5. Wash and dry romaine lettuce leaves
  6. Dice tomatoes and avocado
  7. Assemble wraps by placing turkey mixture in lettuce leaves
  8. Top with tomatoes and avocado
  9. Serve immediately

 

2. Veggie Omelette

Ingredients:

  • 2 eggs
  • Spinach
  • Mushrooms
  • Bell peppers
  • 1 tsp olive oil
  1. Heat 1 tsp olive oil in non-stick skillet
  2. Sauté diced bell peppers and mushrooms for 3-4 minutes
  3. Add handful of spinach and cook until wilted
  4. In a bowl, beat 2 eggs with salt and pepper
  5. Pour eggs over vegetables, tilting pan to distribute evenly
  6. Cook over medium heat until edges set
  7. Gently lift edges to let uncooked egg flow underneath
  8. When mostly set, fold omelette in half
  9. Cook for 1 more minute then slide onto plate

 

3. Cauliflower Fried Rice

Ingredients:

  • 1 head cauliflower (riced)
  • Mixed vegetables (peas, carrots, corn)
  • 1 egg
  • Low-sodium soy sauce
  • Sesame oil
  1. Heat 1 tbsp sesame oil in large skillet or wok
  2. Add riced cauliflower and stir-fry for 3-4 minutes
  3. Add mixed vegetables and cook for 2-3 minutes
  4. Push mixture to one side of pan
  5. Crack egg into empty side and scramble
  6. Mix everything together
  7. Add 1 tbsp low-sodium soy sauce and 1/2 tsp sesame oil
  8. Stir-fry for 1 more minute
  9. Serve hot

 

4. Black Bean Soup

Ingredients:

  • 1 can black beans
  • 1 cup vegetable broth
  • Diced tomatoes
  • Cumin and chili powder
  • Lime juice
  1. In a large pot, combine black beans, vegetable broth, and diced tomatoes
  2. Add 1/2 tsp cumin and 1/4 tsp chili powder
  3. Bring to boil then reduce to simmer
  4. Cook for 15 minutes, stirring occasionally
  5. Use immersion blender to partially blend soup
  6. Add 1 tbsp lime juice and stir
  7. Serve hot with optional toppings: cilantro, avocado, or Greek yogurt

 

5. Berry Smoothie

Ingredients:

  • 1 cup mixed berries
  • 1/2 banana
  • 1 cup almond milk
  • 1 tbsp chia seeds
  • 1/2 cup spinach
  1. Add 1 cup mixed berries to blender
  2. Add 1/2 banana (frozen for thicker smoothie)
  3. Pour in 1 cup almond milk
  4. Add 1 tbsp chia seeds and handful of spinach
  5. Blend on high until completely smooth
  6. Pour into glass and serve immediately
  7. Optional: Top with additional berries or chia seeds
